***RECIPE, MAKES FOUR PIZZAS***

(NOTE: Quantities here are slightly updated from those shown in the video)

For the dough
2 1/4 cups (530 ml) warm water
1 tbsp sugar (12g) sugar
1 tbsp (9g) active dry yeast
2 tbsp (30 ml) olive oil
1 tbsp (18 g) kosher salt
5 cups (600g) bread flour, plus more for working the dough
additional oil for greasing the dough
cornmeal, semolina flour, or coarse-ground whole wheat flour for dusting

For the sauce
1 28 oz (828 ml) can crushed tomatoes (I like Pastene 'Kitchen Ready')
2-4 tbsp (30-60 ml) olive oil
1 tsp (4g) sugar
2 tsp (a fraction of a gram, I don't know) dried oregano

For the cheese
24-32 oz (680-910 g) whole-milk, low-moisture mozzarella, freshly grated (6-8 oz / 170-225 g per pizza)
grated parmesan for dusting (maybe 10 g per pizza?)

Start the dough by combining the water, sugar and yeast in a large bowl and let sit for a few minutes. If the yeast goes foamy, it's alive and you're good to proceed (if it doesn't, it's dead and you need new yeast). Add the olive oil and salt and 5 cups (600g) of bread flour. Mix until just combined, then start kneading. Add just enough additional flour to keep the dough workable (i.e. not too sticky) and kneed until you can stretch some of the dough into a thin sheet without it tearing. (NOTE: You will probably need to add a lot more flour. The quantity I give here is just a base line to get your started.)

Divide the dough into four equal balls and put them in four containers (ideally glass) and lightly coat the balls and the interior of their containers with olive oil. Cover, and either rise at room temperature for two hours, or put them in the refrigerator and let them rise for 1-7 days. (I prefer the long, cold rise.)

When you want to bake, put a pizza stone or pizza steel into your oven (mine works best on a high rack position but every oven is different) and preheat to your highest possible temperature, ideally convection, for a full hour.

For the sauce, simply mix together the ingredients.

Liberally dust a pizza peel with cornmeal (or something similar). Take the cold dough out of the fridge and dust it in flour. Stretch to the widest size and shape that will fit on your peel and stone/steel. Top with just enough sauce to lightly coat the surface. Dust the sauce layer with parmesan, then cover with the mozzarella. Transfer the pizza to the stone/steel and bake until the crust is well-browned and the cheese has browned a bit (but, ideally, has not started oozing out an orange grease layer), 6-7 minutes.

BANGKOK, THAILAND - Today we’re going on a tour to eat the best North Indian food, especially Punjab food, in Bangkok, Thailand. We’re going to eat everything from street food in Pahurat to Indian fine dining. Get ready for an ultimate Indian food experience in Bangkok, Thailand!

We’re starting this tour in Pahurat, which is known as Bangkok’s Little India. Surrounding the main Siri Guru Singh Sabha Sikh Temple, you’ll find narrow alleys and lanes with lots of street food and hole in the wall restaurants.

Punjab Sweets (https://goo.gl/maps/nc5FxTyewPR24oEr9) - Just down the alley outside of India Emporium is Punjab Sweets a 30 year shop selling sweets and Indian food - especially dishes like chole bhatura. It’s a great place to hang out for a morning tea and their chole bhatura is the real highlight. The owner was also really nice and gave us a place of their famous sweets to try. Prices - 100 - 150 THB ($2.99 - $4.48)

Just outside Punjab Sweets is a great stall to try Paan - 10 THB ($0.30)

Samosa Corner (https://goo.gl/maps/eKv7dVAdKVqV6kQi9) - I believe it’s one of the only samosa street food stalls in Bangkok that’s been serving delicious samosas and pakoras for 45 years. You don’t want to miss it when you’re in Pahurat. Price - 70 THB ($2.09) for 5

Amritsr (https://g.page/amritsr?share) - Next up on this North Indian food tour in Bangkok we went to Amritsr, specializing in Punjabi cuisine, especially Amritsari dishes. This is the type of restaurant where you’ll find a huge menu of dishes, and you can’t really go wrong. They have a huge section of dishes cooked in the tandoor, and my favorite was the achari tikka, one of the greatest ever. They also have the entire range of North Indian thick and rich curry’s. Highly recommended for some of the best North Indian restaurants in Bangkok. Prices - 200 - 400 THB ($5.97 - $11.95) per dish

Punjab Grill (https://g.page/punjabgrillbangkok?share) - Finally to complete this North Indian food tour in Bangkok, we went to Punjab Grill, a contemporary North Indian restaurant that serves authentic and modern dishes. Their lamb dishes are particularly delicious and I also loved their incredible tandoori prawns. You can order a la carte, and they also offer a tasting menu, as a fine dining experience, and a buffet brunch on Sundays. Prices - 400 - 800 THB ($11.95 - $23.89) per dish

It was an amazing time eating through Bangkok, at some of the best North Indian restaurants!

Fast Food restaurants have huge menus! For 72 hours, I challenged myself to take down every item on a bunch of different fast food menus near me.

HANOI, VIETNAM - Today we’re going on an ultimate Vietnamese street food tour to eat 5 of the must eat Vietnamese foods in Hanoi, that are not pho. I’m hanging out with local food expert @Hanoifood from Hanoi Food. We’re eating some local favorite Vietnamese dishes and some extreme dishes as well. It’s going to be delicious!

Here are all the places we ate:

1. Xôi Xéo

Price: 15,000 VND ($0.63) per bowl
One of the common breakfasts in northern Vietnam is sticky rice with toppings. She has to be one of the fastest food assemblers in all of Vietnam!

2. Bún Riêu
Location: Bún riêu Hàng Lược (https://goo.gl/maps/WbUu189N5ihHDKDP9)
Price: 75,000 VND ($3.15) for fully loaded bowl
Pho is extremely common in Vietnam, but there are so many other noodle soups, and bun rieu is one of the best. This place is extremely popular and we ordered it fully loaded!

3. Bún Chả
Bún Chả Hàng Quạt (https://goo.gl/maps/QJqbDn8X6miUBKzE9)
Price: 45,000 VND ($1.89) per portion
If there’s one dish that you have to eat when you’re in Hanoi, Vietnam, it would be bun cha for lunch. The combination of grilled pork in a soup of fish sauce with noodles and vegetables is heavenly.

4. Bún ốc
Location: Bún ốc cô Huệ (https://goo.gl/maps/uVRbstsbXmLntvdU8)
Price: 40,000 VND ($1.68) per bowl
One of Khoa’s favorite local dishes is bun oc, or snails and noodles. We specifically tried the cold version with giant snails!

5. Cháo
Location: Cháo Sườn Sụn Huyền Anh Đồng Xuân (https://goo.gl/maps/FJhqyLWhaqjo7xhP9)
Price: 35,000 VND ($1.47) per bowl
Another common dish in Vietnam is chao, or congee, rice porridge. Rather than being chunk with rice grains, this was one of the smoothest bowls of congee ever.

6. Chả Rươi

Price: 35,000 VND ($1.47) per piece, we ate 5
One more extreme Vietnamese food we had to try was cha ruoi, a sandworm pancake. A little bizarre, but proved to be one of the best meals of the day!
