-Ghee ¾ Cup
-Pyaz (Onion) sliced 2 large
-Badi elaichi (Black cardamom) 2
-Hari elaichi (Green cardamom) 5-6
-Laung (Cloves) 3-4
-Kali mirch (Black pepper corns) ½ tsp
-Baadiyan ka phool (Star anise) 1
-Darchini (Cinnamon sticks) 2-3
-Kala zeera (Black cumin seeds) 1 tsp
-Tez paat (Bay leaves) 3
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Chicken (Qorma cut) ½ kg
-Namak (Salt) 1 tsp or to taste
-Paprika powder 1 tsp
-Dhania powder (Coriander powder) roasted 2 tbs
-Lal mirch powder (Red chili powder) 2 tsp
-Zarda ka rang (Yellow food color) ¼ tsp
-Pani (Water) ½ Cup or as required
-Dahi (Yogurt) sour 1 Cup
-Jaifil powder (Nutmeg powder) ¼ tsp
-Javatri powder (Mace powder) ¼ tsp
-Garam masala powder ¼ tsp
-Makhan (Butter) ½ tsp
-Kewra water 1 tsp
-Badam (Almonds) blanched for garnishing
-Adrak (Ginger) for garnishing

Directions:
-In pot,add ghee and let it melt,add onion and fry until golden brown & set aside.
-In the same pot,add black cardamom,green cardamom,cloves,black pepper corns,star anise,cinnamon sticks,black cumin seeds,bay leaves and fry for 1 minute.
-Add ginger garlic paste and mix well.
-Add chicken and fry until chicken changes color,cover and cook for 4-5 minutes.
-Add salt,paprika powder,coriander powder,red chili powder,yellow food color and mix well for 2 minutes.
-Add water and mix well.
-Turn off the flame,add yogurt and mix well for 2 minutes.
-Turn on flame,add nutmeg powder,mace powder,mix well and cook for 2-3 minutes.
-Add fried & crushed onion and mix well,bring it to boil,cover and cook for 2-3 minutes.
-Now cook on high flame for 2-3 minutes.
-Add garam masala powder,butter,kewra water and mix well.
-Garnish with almonds and ginger.
Tip: For crispy onion evenly spread on paper towel to remove excess oil & Let it completely cooled.

-Chicken dal dein aur chicken ka rang tabdeel hunay tak fry ker lein,dhak ker 4-5 minutes kliya paka lein.
-Namak,paprika powder,dhania powder,lal mirch powder aur zarda ka rang dal ker 2 minutes kliya ache tarhan mix ker lein.
-Pani shamil ker ka mix ker lein.
-Chulha bund ker dein,dahi shamil karein aur 2 minutes kliya ache tarhan mix ker lein.
-Chulha on karein,jaifil powder aur javatri powder dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Fried & crushed pyaz dal ker ache tarhan mix ker lein,ubal anay ka bad dhak dein aur 2-3 minutes kliya paka lein.
-Ab tez ancch per 2-3 minutes kliya paka lein.

📍 Street 207, Krong Battambang, Cambodia

🧠 *BRAIN SOUP*:
Raw pig brain, pepper, secret vegetable broth. Steam for 5 minutes in a bowl. Add mushroom (the thin ones), steam for another 5 minutes. Finally add balut. Serve.

🐸 *SUN DRIED FROG*
Marinate with fish & soy sauce, palm sugar, msg, salt, sugar, chili, garlic, ginger, dried bell peppers. Sun dry for 2 days. Deep fry.

*2. Frog Farm*
📍 Battambang, Cambodia
INTERVIEWEES: Som Han (Owner), Chea Chenda (Friend)

🐸 *STUFFED FROG*
Soak dry chili, soak dry glass noodles.Cut the feet off the frog and discard. Chop frog thighs off. Chop together with pork (bones and all). Mix with Kroeng. Drain and chop noodles mixture. Mix in roasted peanuts and the soaked chili. Add salt, sugar, chicken bullion, msg, chop to mix. Stuff frogs with mixture and grill for 30 minutes.

🐸 *FROG SOUP*
Add crunchy powder, yellow food coloring, sugar, msg, chicken bullion, cream powder, and salt to water bugs. Squish to get the muddiness out and seasoning in. Deep fry for 5 minutes.

*3. Rat Farm*
📍 Kampong Thom, NR62, Cambodia
INTERVIEWEE: Muy Chomrern

🐀 *GRILLED RAT*
Marination: pepper, shallots, garlic,smash together then add msg, chicken bullion, palm sugar, mix altogether, then rub on the rat. Add chinese black bean sauce and then oyster sauce. Rub on the rat. Split the bamboo stick to stick the rat between then tie with metal wire. Grill for roughly 1 hour.

🐀 *ROASTED RAT*
Marination: pepper, shallots, garlic,smash together then add msg, chicken bullion, palm sugar, mix altogether, then rub on the rat. Add chinese black bean sauce and then oyster sauce. Rub on the rat. Fold in the tail and put the marinated rat in a roasting cage. Hang the cage into a roasting vase for 1 hour.

🇿🇦MAGWINYA (FAT CAKES): Roll the dough and slice it to form the shape. Place shaped dough in the fryer until golden brown. Serve with your choice of sides: acha (local mango chutney) and/or white liver.

🇿🇦OX LIVER STIR-FRY: Chop bell peppers and red onion. In a wok, add raw ox liver. Add the mix of red onion and peppers. Continue stir-frying. Add BBQ spice mix (secret blend), add Al’s chili sauce and continue mixing to stir fry. | Spinach: chop bell peppers and white onion. Drain the spinach. In a pot, add olive oil. Add pepper and white onion mix, then shredded carrots. Add special seasoning and beef stock and continue stirring. Let it cook for about three minutes, then add spinach and cream of mushroom mix and stir. Separately, add powdered cream of mushroom soup in a cup and mix with water.

FUKUOKA, JAPAN - Welcome to Fukuoka, on the island of Kyushu, in southern Japan, and this is one of the capitals of Japanese street food in the country. They have done an amazing job to preserve the culture of “yatai” or portable street food stalls that set up in the evening across the city. Tonight we’re going on an ultimate Japanese street food tour in Fukuoka, going to 5 different place for 5 Japanese dishes and I can’t wait to share all the food with you now.

#1 Yaki Ramen
Location: Kokinchan: https://goo.gl/maps/AMGdvUadJR6JbFwi6 - We’re starting off with a famous yatai stall where they invented the original yaki ramen - or fried ramen. It was definitely new to me, I thought it would be more of a dry fried noodles, but it was rather a wet and soup fried noodle dish. Amazing, as were the other dishes.
Price - 2,650 JPY for everything

#2 Gyoza
Location: Yatai Mamichan: https://goo.gl/maps/dwSFjcZea59H947D8 - You can go on a Japanese street food tour without eating gyoza, and Yatai Mamichan is one of the best places to eat them. The chef is amazingly skilling, cooking everything on his own and darting from station to station. Part of the great thing about eating at Yatai is being right in front of the cooking and interacting with the chef.
Price - 8,450 JPY for 5 people (we ordered a lot and lots of drinks)

#3 Tempura - Next, I’m not totally sure of the name of this place, but they are known for their tempura, battered and deep fried seafood and vegetables. It was a little oily, but still quite tasty.
Price - 1,100 JPY

#4 Hakata Ramen
Location: Yatai Kiryu: https://goo.gl/maps/RB5UQkK8wFUG8TTX6 - Hakata ramen, or tonkotsu ramen is one of the most common and popular dishes in Fukuoka and you’ll find Hakata ramen served at nearly all yatai food stalls.
Price - 650 JPY per bowl

#5 Yakitori
Location: Yatai Kawachan: https://goo.gl/maps/5jzCzVt4VwHJ7hGS7 - Finally we ate at a place called Yatai Kawachan, known for their yakitori, or grilled chicken skewers. It was a quite a selection of different skewers from gizzard to hot dog.
Total price - 4,400 JPY for everything with drinks

The yatai street food culture in Fukuoka is one of the great Japanese food scenes in Japan. Let’s hope generations continue to take pride in their food stalls and preserve the yatai culture.

Fast Food restaurants have huge menus! For 72 hours, I challenged myself to take down every item on a bunch of different fast food menus near me.

This 72 hour fast food calorie challenge was incredibly challenging because I let a random wheel choose the restaurant I went to and I let a pair of dice determine how many fast food menus I had to eat! Stick around to see if I was able to complete this fast food calorie challenge!
